Paleo…Just Do It – Tomato Basil SoupServes 3 as a side dishIngredients1 large yellow onion, diced3 cloves garlic, finely chopped2 TBSP olive oil1 large or 2 medium sized carrot, diced3 celery stalks, diced800g can diced tomatoes1.5 – 2 cups chicken stock3/4 cup fresh basil, roughly choppedSalt and pepperDirections1.
