Green pancakes

Good Food – Yes, these are GREEN. The secret ingredient is spinach, and no, you can’t taste it. Trust me.I was inspired by this recipe on a blog I recently discovered, Health Food Lover.Apologies for the teeny photo – I took it on my phone and I’m a bit challenged when it comes to figuring out new stuff. Hey, I’ve only had it five months – that’s still new! I’ll sort it later…Serves 42 eggs and 1 egg whiteAbout 75g of baby spinach1 large or 2 small bananas1/2 cup buckwheat flour1 tsp baking powderAbout 30g of vanilla… Read more

Apple & date muffins

Good Food – These are very moist and the dates give them plenty of sweetness. If you prefer your cakes super-sweet, you may need to add some sugar or sweetener, but I think they’re fine as they are. As a bonus, these are wheat and gluten-free – as long as you use a gluten-free baking powder. Makes 128 large fresh dates, pitted and chopped2 Granny Smith apples, peeled, cored and grated½ cup quark2 eggs¼ cup macadamia oil200g unsweetened apple puree (I use baby food)1 tsp vanilla essence½ cup buckwheat flour¾ cup ric… Read more

Quick and easy fruit crumble

Good Food – I felt like dessert last night, but didn’t want to be fussing in the kitchen for hours. A bit of thought and a perusal of the pantry supplies, and this is what I came up with:1 apple, cored, quartered and sliced (don’t bother peeling)1/4 cup dried cranberries1/4 cup dried fruit medley1 tbs brown sugar 1/2 cup wheat-free muesli (I didn’t measure this, so it may have been more like 3/4)1-2 tbs butterMix the apple, cranberries and dried fruit in a small ovenproof dish. Sprinkle the brown sugar over, add a teas… Read more

Home made chicken stock

Good Food – Nothing beats a home-made stock, and if most people only knew how easy it was to make, stock cubes would disappear from the supermarket shelves. We make up a pot of stock regularly, and freeze it in two-cup portions in cheap plastic containers we get from the $2 Shop. Then, when we want to make a casserole, soup or sauce, we have the world’s best stock on hand. Here’s my recipe, handed down from my Mum:1 chicken carcass1 medium carrot, trimmedI medium brown onion, ends removed1 stick of celery6 peppercorns2 … Read more

Hearty winter beef and mushroom casserole

Good Food – First off, I have to apologise for the lack of a photo. What can I say? Beef casserole looks like… well beef casserole, and I can never seem to photograph it in a way that makes it look appealing. This turned out brilliantly though, so take my word for it and give it a go anyway. The best thing about it is the no-fuss method. No browning, no mucking about, you don’t even need to peel the potatoes; just throw everything in and let it cook.Serves 61.5kg chuck or blade steak, cut into 3cm cubes¼ cup plain fl… Read more

Peposo (Tuscan beef stew)

Individual blueberry cheesecakes

Good Food – I had a love affair with quark for quite a while, and then it disappeared from my local supermarket shelves. Boo! BUT…yesterday, I discovered a new brand at my favourite fruit and veg shop (which also has a pretty good deli/dairy range). Long story short, I had to get creative with my exciting purchase. Middle Eastern style baked salmon

Raw chocolate fruit and nut bars

Good Food – I just created these today – they need some tweaking, not for taste (which is AWESOME) but for stick-togetherness. I’ll post an update when I manage to perfect them, but don’t be put off by that. They’re a bit crumbly, but absolutely delicious. Plus: really simple to make! :)Makes 20 serves1/2 cup cocoa powder1/2 cup mixed dried fruitAbout 1/2 cup dried cacao beans1/2 cup raw almonds1/2 cup walnut halves1 tbs flax seeds1/4 cup dried Goji berries2 tbs coconut oil, melted2 tbs agave syrupPlace all ingredients…
